Ingredients:
1 pound white beans (Great Northern)
1 1/4 quart chicken broth
1 large onion, chopped
1 clove garlic, minced
1 teaspoon salt
2 teaspoons leaf oregano
2 teaspoons ground coriander
dash paprika
pinch ground cloves
pinch cayenne
4 chicken breasts, skinned, cooked & diced (as much as you want)

On the side:
grated Monterey Jack Cheese
green onions
corn chips
Instructions:
Either soak beans overnight or use directions on pkg for faster
Drain & sort beans
Combine beans, all of the stock, 1/2 of the onions & the garlic
Bring to a boil
Reduce heat & simmer 1 1/2 hours or until beans are tender

In non-stick skillet, heat oil & cook the rest of the onion until clear
Add chiles & spices & mix & cook 10 or 15 minutes
Add mixture to beans
Add chicken during the last 1- to 15 minutes of cooking

Serve with corn chips or corn bread, green onions & cheese.

I use a little more broth -- not another whole carton -- if you do use too much, you need to increase the spices.
