  Cucumber Salsa

Ingredients:
2 cups finely chopped cucumber
3/4 cup finely chopped red bell pepper
salt & pepper
2/3 finely chopped red onion
1/2 cup chopped fresh cilantro
2 T red wine vinegar
2 T EVOO
Instructions:
Mix all ingredients in large bowl & season with salt & pepper.
(Can be prepared up to 4 hours ahead. Cover with plastic & refrigerate.)

Makes about 3 cups.
