  Chicken-Nut Salad

Ingredients:
1/3 cup shelled pistachio nuts, finely ground
salt & pepper
4 boneless, skinless chicken breast halves (1 1/2 pounds)
2 T olive oil, divided
1 medium sweet white onion
1 can (8 1/2 oz) whole kernel corn, drained

Dressing:
1 large ripe avocado, pitted & peeled
3 T olive oil
3 T fresh lime juice
1 T water
1/2 tsp salt
1/8 tsp pepper

1 head romaine lettuce, sliced
Instructions:
1. heat oven to 375. Combine nuts with 1/2 tsp salt & 1/8 tsp pepper in pie plate. Press smooth side of chicken into nuts. Heat 1 T oil in ovenproof skillet. Add chicken, nut side down, & cook 2 minutes per side. Bake until cooked through, 12 to 15 minutes.

2. Dice 1/2 cup onion. Grate 1 tsp from the remaining onion; set aside. Heat remaining oil in nonstick skillet over high heat. Add diced onion, 1/4 tsp salt & 1/8 tsp pepper. Cook until onion is lightly charred. Add corn & cook 2 minutes.

3. Make dressing: Puree grated onion & remaining ingredients in blender. Line 4 serving plates with romaine. Slice chicken & arrange a breast on each plate. Top with corn. Serve with dressing.

Serves 4.
