Ingredients:
5 medium potatoes (about 2 pounds)
2 T each butter & salad oil
1/8 tsp paprika
salt & coarsely ground pepper
Instructions:
1. Scrub potatoes well. Cook in their jackets, in boiling water until about half cooked (15 to 20 min). Without peeling, slice potatoes about 1/8 inch thick.

2. In a large heavy frying pan over medium-low heat, melt butter with oil & paprika. Add potatoes. sprinkle lightly with salt & pepper.

3. Cook, using a wide spatula to lift & turn potatoes occasionally, until they are brown & crusty on all sides (20 to 25 min). Turn carefully to keep slices from breaking.

Serves 4 to 6.
