  Pasta w/ Corn, Beans & Tomatoes

Ingredients:
8 oz uncooked med seashell pasta
1 cup (1-inch) cut green beans (about 1/4 pound)
1 T EVOO
3 cups fresh corn kernels (about 6 ears)
1 1/2 cups finely chopped red bell pepper
3/4 cup chopped green onions
1 cup seeded plum tomato
6 T chopped fresh parsley, divided
2 t chopped fresh mint
1 T chopped fresh dill
1/2 tsp salt
1/4 tsp pepper
1 cup (4 oz) crumbled feta cheese
6 lime wedges
Instructions:
1. Cook pasta in boiling water 10 min. Add green beans; cook 3 min. Drain well.

2. Heat oil in a large nonstick skillet over med heat. Add corn, bell peppeer & onions; saute 8 min. Add tomato, 1/4 cup parsley, mint, dill & salt & pepper. Remove from heat. Stir in pasta mixture & cheese & sprinkle w/ 2 T parsley. Serve w/a lime wedge.

Serves 6. Serving size 1 1/2 cups.
