  Grilled Halibut w/Rum Sauce

Ingredients:
1 T lime juice
1 T orange juice
1 T grated gingerroot
1 T minced garlic
1 T fresh cilantro, chopped
1/4 tsp ground cumin
1/4 tsp allspice
t tsp pepper
2 T honey
1/4 cup dark rum
1 1/2-inch thick halibut steaks
1/4 cup fresh orange juice
1 T Dijon mustard
1 T balsamic vinegar
1/2 cup EVOO
salt & pepper
2 cups mesclun or assorted salad greens
1 cup whole olives - Greek, Nicoise, etc
Instructions:
1. In a shallow glass pan, mix together the juices, herbs & spices, honey & rum. Dredge halibut in the marinade on both sides; cover with plastic wrap & refrigerate. Marinate fish 1 to 4 hours, turning occasionally.

2. Mix together the orange juice, mustard & vinegar in a med bowl; add oil, whisking until thickened. Salt & pepper to taste, adding as necessary. Set aside.

3. Remove fish from marinade & pour sauce into a small saucepan; simmer until heated through. Heat an oileded, ridged fry pan over med heat. Grill fish, basting with sauce, 2-3 min on each sides, shifting them diagonally to make criss-cross grill marks.

4. Place greens on four heated plates; spoon a T of orange dressing over salad & halibut on top.
