Ingredients:
6 medium red potatoes
2 plus Cheddar Cheese, shredded
1/4 cup butter
1 1/2 cups sour cream
1/4 cup chopped onions
1 tsp salt
1/4 tsp pepper
paprika
Instructions:
1. Cook potatoes in skin until just tender. Chill
2. Shred coarsley with grater or food precessor.
3. In saucepan, over low heat, combine cheese & 1/4 cup butter. Stir until almost melted. Remove from heat.
4. Blend in sour cream, onion, salt & pepper.
5. Fold in potatoes & turn into a greased casserole.
6. Sprinkle with cheese & paprika.
7. Bake, covered for 30 minutes @ 350.

Serves 8.
Always a hit.
