Ingredients:
3 cups dry green splits
5 cups water
1 bay leaf
2 tsp salt

1 cup minced onion
3 cloves crushed garlic
1 cup minced celery
1 small, thinly sliced, potato
2 T oil2 cups sliced carrots

1/4 cup dry red wine
1/4 tsp dry mustard
1/4 tsp thyme
a few drops of sesame oil

3 T vinegar
1 cup chopped tomatoes
1/4 cup freshly chopped parsley
Instructions:
1. Simmer beans, water, bay leaf & salt, covered, 3-4 hours. Remove bay leaf.

2. Saute onion, garlic, celery, potato & carrots in 2 T oil. If necessary, add a little water to steam. When tender, add to soup. Continue simmering.

3. About 15 minutes before serving time, add: wine, mustard, thyme & oil.

4. Just before serving add: vinegar, tomatoes, & parsley.

Serves 6.
