  Crabmeat Quesadillas

Ingredients:
1/2 cup Muenster cheese, grated
1/2 cup Montery Jack, grated
2 T Parmesan, grated
1/4 cup goat cheese
1 cup crabmeat, drained & picked through
4-8 flour tortillas
peanut oil
salsa
Instructions:
Combine cheeses in processor by mixing in short pulses, turning processor on & off until cheese mixture is crumbly in texture.

Assemble quesadillas by placing 1/4 cup cheese mixture in middle of tortilla. Top with 1/4 cup crabmeat. Fold tortilla gently in half, making sure cheese stays in the middle.

Preheat a crepe pan or griddle to medium heat. Wipe interior of griddle with a paper towel moistened with oil. Place folded tortilla on griddle & cook approximately 1 minute each side, allowing cheese to melt & the outside to lightly crisp. Repeat for remaining tortillas.

Cut each into 4 wedges & serve with salsa.

Serves 2-4.
