Ingredients:
12 slices white bread
1 T butter, softened
4 slices bacon, crisp-cooked & crumbled
1 beaten egg
1/2 cup whipping cream
1 T snipped chives
1/8 tsp ground red pepper, plus
1/2 cup shredded cheese
pimiento
Instructions:
Cut a 3-inch round from center of bread slice (I use a glass).
Roll each out with a rolling pin to flatten slightly.


Preheat oven to 350.

Grease 12 2 & 3/4-inch muffin pans with the butter, spreading over the bottom & about 1/2-inch up sides. Press 1 bread round in each cup to form a cup. Bake at 350 for 5 to 7 minutes.

Divide bacon among cups. In large mixing cup, combine egg, whipping cream, chives & red pepper; pour equally into cups. Sprinkle with cheese.

Bake at 350 for 15-plus minutes until cruse is firm & center is set. Let stand 2 minutes before removing to plate.

Garnish with pimiento if desired.

Serves 12.
