  Brie, Papaya & Onion Quesadillas

Ingredients:
1 T olive oil
1/2 medium onion, thinly sliced
2 tsp minced & seeded jalapeno chili
eight 6-inch flour tortillas
8 oz Brie, diced
1/4 cup chopped fresh cilantro
1/4 to 1/2 papaya, peeled, seeded & thinly sliced crosswise
sour cream &/or salsa optional
Instructions:
Preheat oven to 425.

Heat oil in medium skillet on medium-high heat. Saute onion & jalapeno until onion is just tender, about 4 minutes. Let cool slightly.

Arrange 4 tortillas on a heavy, large baking sheet. Arrange Brie, then cilantro, papaya & onion over tortillas, dividing equally. Top each with another tortilla, pressing to adhere.

Bake quesadillas until cheese melts & filling is heated through, about 4 to 5 minutes. Allow to cool. Transfer to cutting board, turning over. Cut into wedges.

Pass sour cream &/or salsa, if desired.
