Ingredients:
One garlic clove, pealed & smashed
One medium onion (use more or less to taste)
One Tablespoon tomato paste
1 1/2 teaspoons Old Bay
1/2 teaspoon smoked paprika
One 15 ounce can diced tomatoes (with garlic, oregano, & basil---Use 1 1/2 cans)

shrimp-- Jay likes tails off

quick grits with butter & cheese

Parmesan - shredded
Instructions:
clean shrimp. Set aside. Cook onions & garlic for about 10 minutes.
Add tomato paste, Old Bay & paprika. Stir & cook for 1 minute. Add tomatoes. Increase heat to medium. Cover & simmer for 10 minutes.

Prepare grits. Bring to boil 3 cups of water. Slowly add the grits. Stir & keep stirring until the grits are smooth & creamy. Add a T of butter & a handful of cheese.

Add the shrimp & cook for another minute-- being careful that the shrimp doesn't turn to rubber.

Serve in individual pasta bowls. Ladle the grits and then the tomato mixture.
