Ingredients:
2 cups water (or as pkg directs for 1 cup grits)
salt & pepper
1 cup stone ground grits
1 1/2 T butter
1 cup cheddar, shredded
1/2 lb shrimp
3 slices bacon, fried crisp & crumbled
2 tsp lemon juice
1 T chpped fresh parsley
1/2 cup thinly sliced scallions
1/2 clove garlic, minced
Instructions:
Bring water to a boil & add salt & pepper. Add grits & cook until water is absorbed, 20-25 minutes, or as pkg directs. Remove from heat & stir in cheese & butter.

Clean & rinse shrimp & pat dry. I also removed tail shells.

Fry bacon until crisp, drain. Add shrimp to grease. Cook until shrimp turns pink. Add lemon juice, crumbled bacon, parsley, scallions & garlic. Saute 3 minutes.

Spoon grits into bowls & add shrimp mixture on top.

I used instant grits because that was all I could find in the grocery store. It was Bob's Red Mill corn grits. Also, I halved the recipe.
