Ingredients:
2 T olive oil
1/4 tsp pepper
4 med baking potatoes (1 lb, peeled) I don't always peel.

FISH:
1/3 cup flour
1/4 tsp pepper
1 egg, lightly beaten
2 T water
2/3 cup crushed corn flakes
1 T grated Parmesan
1/8 tsp cayenne pepper (I don't use.)
1 lb haddock or cod fillets
tartar sauce optional
Instructions:
1) In a med bowl combine oil & pepper. I use a plastic bag. Cut potatoes lengthwise into 1/2 inch strips. Add to oil mixture; toss to coat.

2) Place on baking sheet covered with cooking spray. Bake, uncovered, at 425 for 25-30 minutes or until golden brown.

3) In a shallow plate/dish combine flour & pepper. In a 2nd dish, beat egg & water. In a 3rd dish, combine the cornflakes, cheese & cayenne.
Dredge fish in flour, then dip in egg mixture & coat with crumb mixture.

4) Place on a baking sheet coated with cooking spray. Bake at 425 for 10-15 minutes or until fish flakes easily with fork. Serve with chips & tartar sauce, if desired.

Serves 4.
