  Tortilla Chicken Soup

Ingredients:
1 tsp vegetable oil
1 cup finely chopped onions
2 garlic cloves, minced
1 T chili powder
1 tsp ground cumin
1 tsp dried oregano
2 (14.5 ounce) cans, fat-free low-sodium chicken broth
2 (14.5 ounce) can no-salt diced tomatoes, undrained
1 (16 ounce) can fat-free refried beans
1 bay leaf

2 ounces baked tortilla chips, crushed (about 2 cups)
sour cream
Instructions:
1. Heat oil in large, heavy pot over medium heat.
2. Add onion & garlic & saute 3 minutes.
3. Add chili powder & the next 6 ingredients (through bay leaf).
4. Bring to a boil, reduce heat & simmer 45 minutes. Remove from heat, discard bay leaf.
5. Ladle into serving bowls & pass chips & sour cream.

Serves 4 (2 cups soup & about 1/2 cup corn chips.

May be served over hot cooked rice with crusty bread.
