Ingredients:
2 tsp EVOO
3/4 cup chopped onion
1/2 cup chopped green onion, white part & some green
1 T minced garlic
16 oz frozen, chopped spinach
1/2 tsp salt
1/2 tsp pepper & more to taste
1/2 lomon
1/4 cup egg substitute
6 oz crumbled Feta cheese
1/4 tsp ground coriander
1/4 tsp freshly grated nutmeg
10 sheets phyllo pastry, thawed
approx 3 T EVOO or more if needed
Instructions:
Heat oven to 350
Coat the inside of a 9x13 inch baking pan with cooking spray.
In large, non-stick frying pan, heat 2 tsp EVOO over med-high hea. Stir in onions, green onions & garlic & saute for about 3 min. Lightly squeeze the spinach to remove.
