  Aromatic Scampi (Scampi Aromatici)

Ingredients:
flour, salt & freshly ground pepper for dredging
1 3/4 pounds scampi or large shrimp, peeled & deveined
1/4 cup olive oil
4 T butter
3/4 cup white wine
3 T capers, drained
Juice of 1/2 lemon, or more to taste
1/4 cup finely chopped fresh tomatoes
7 T vegetable broth
minced parsley for garnish
Instructions:
In a shallow dish, combine the flour, salt & pepper & dredge the shrimp in the flour mixture.

In a large saute pan or skillet, heat the olive oil & butter over medium heat & saute the shrimp for 3 or 4 minutes or until they turn pink.

Add the wine, bring to a boil, & cook until the wine evaporates.

Remove the shrimp from the pan & place on a hot serving dish. Cover to keep warm.

Add the capers, lemon juice, tomatoes & vegetable broth to the pan & simmer for 5 to 10 minutes. Ladle the sauce over the shrimp & sprinkle with the minced parsley. Serve warm.

Serves 6.
