Ingredients:
6-8 med carrots, sliced 1/4 inch thick
1/4 cup water
1 10-ounce pkg frozen, chopped broccoli
1 10-ounce pkg frozen cauliflowerets
1-2 jars (4 1/2 ounces) whole mushrooms, drained
2 T cornstarch
1 tsp salt
1/4 tsp pepper
1 1/2 cups milk
1/2 cup butter, melted, divided
1 cup (4 oz) shredded Swiss cheese
2 T Parmesan
1/2 cup seasoned croutons
Instructions:
1. Place carrots & water in 3-quart microwave safe dish. Cover & cook on high for 2 min. Add broccoli & cauliflower.

2. Cover & cook for 6-9 min or until vegetables are tender. Drain. Add mushrooms & set aside.

3. In another microwave safe dish, combine cornstarch, salt & pepper. Stir in milk & 6 T butter. Stir until smooth.

4. Cover & cook on high for 3-5 min or until thickened & smooth, stirring after each minute. Add Swiss & parmesan, stirring until melted.

5. Pour over vegetables. Cover & cook for 2-4 min or until heated through. Combine the croutons & remaining butter; stir into the vegetables.

Serves 8-10.
