  Italian Chicken Mozzarella Melt

Ingredients:
4 skinned & boned chicken breast halves
2 T olive oil
1/4 tsp salt
1/2 tsp dried oregano, divided
1 cup pizza sauce
1 1/2 tsp fresh or 1/2 tsp dried basil
4 French rolls, halved & toasted
1 small zucchini, shredded
1/2 cup (2 ounces) shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Instructions:
Brush each piece of chicken with olive oil; sprinkle with salt & 1/4 tsp oregano.

Cook chicken in a greased nonstick skillet over medium-high heat about 4 minutes on each side or until well done. Set chicken aside.

Combine pizza sauce, basil & remaining 1/4 tsp oregano in skillet; cook over medium-high heat until thoroughly heated. Remove from heat; add chicken, & keep warm.

Place rolls on a baking sheet; spread sauce evenly on bottom half of each roll; top evenly with chicken, zucchini & cheeses.

Broil 3 inches from heat (with electric oven door partially opened) 2 to 3 minutes or until cheese melts. Cover with tops of rolls.

Serves 4.
