  Southwestern Chicken Corn Pudding

Ingredients:
Nonstick spray coating
1 cup cubed, cooked chicken or turkey
1 cup frozen whole kernel corn
1 4 1/2 ounc can diced green chili peppers, drained
2 beaten eggs
2/3 cup skim milk
3/4 cup flour
1/4 tsp salt
1/8 tsp pepper
1/4 cup (2 ounces) shredded cheddar cheese
salsa (optional)
light dairy sour cream (optional)
fresh cilantro (optional)
Instructions:
1. Spray a 9 inch pie plate with cooking spray & set aside.

2. In a medium mixing bowl stir together chicken or turkey, corn & chili peppers. Spread mixute in prepared pie plate.

3. In the same bowl stir together the eggs & milk. Beat in flour, salat & pepper. Pour over chicken mixture.

4. Bake, uncovered, in a 400 oven for 25 to 30 minutes or until top is set & lightly browned. Sprinkle with cheese & bake for 2 to 3 minutes or until cheese melts. If desired, serve with salsa & sour cream & garnish with cilantro.

Makes 4 servings.

***offer cilantro separately.
