Ingredients:
1/4 cup (1/2 stick) butter
3 med onions, thinly sliced
1 1/2 cups dark beer
2 cups beef stock or canned broth
2 cups low-salt chicken stock or canned broth
salt & pepper

12 1-1/2-inch-thick French bread baguette slices, toasted
6 thin slices Gruyere cheese
Freshly grated Parmesan cheese
Instructions:
Melt butter in heavy, large pot over med heat. Add onions & saute until deep golden brown, stirring occasionally, about 20 min.
Add beer. Cover & cook 5 min. Add both stocks & bring to boil. Reduce heat & simmer, uncovered, 30 min, stirring occasionally. Season to taste with salt & pepper.

Soup can be prepared 1 day ahead; cover & refrigerate. Bring to simmer before continuing.

Preheat broiler. Ladle soup into broiler-proof soup crocks. Top with toasted bread & Gruyere slices. Broil until cheese melts & bubbles. Sprinkle with Parmesan & serve.
