  Orzo Chicken Salad

Ingredients:
1 9-ounce pkg sugar snap peas, frozen
1 16-ounce pkg orzo, cooked & drained
1 cup water chestnuts (omit)
3 cups diced, cooked chicken (may omit)
3 green onions, chopped
1 medium red bell pepper, diced
1/2 cup veg oil
3 T rice wine vinegar
2 T soy sauce
2 teas hosin sauce
1 2-ounce slivered almonds, toasted (1/2 cup)
Instructions:
Cook peas & drain well.

Combine peas, orzo, green onions (& water chest, chicken & pepper)

In small bowl, whisk oil, vinegar, soy & hosin & pour over orzo. Toss gently to coat.

Stir in almonds. Cover & chill until ready to serve.

Serves 12.
