  Grilled Salmon With Citrus & Herbs

Ingredients:
2 tsp grated lemon zest
2 tsp grated lime zest
1 T minced garlic
1 1/2 tsp coarse salt
1/2 tsp black pepper
1 T EVOO
1 T chopped fresh parsley
1 T chopped fresh thyme
4 salmon steaks, about 3/4-inch thick
Instructions:
Preheat broiler or grill pan. Combine all ingredients, except salmon, in a small bowl. Mix well. Rub mixture on salmon. Place salmon under broiler or on a preheated & oiled grill pan, turning once after 3 minutes. Grill the other side for an additional 3 minutes for med-rare.

Serves 4.

We like our fish cooked through so will grill it longer than the suggested 6 minutes.
