  Peach Sauce

Ingredients:
1 clove garlic
2 T cilantro leaves
2 large freestone peaches (about 1 lb)
1 jar roasted red pepper
1 T reduced-fat sour cream
Instructions:
1. Peel garlic & drop clove through food processor feed tube onto moving steel blade. Process until finely chopped.

2. Rinse & dry cilantro leaves & remove any tough stems. Drop leaves through food processor tube onto moving blade & process until finely minced.

3. Peel & pit the peaches & add fruit to processor bowl. Add the red pepper. Process 30 seconds & stop to scrape down the sides of the bowl. Process 15 seconds more. Pour into a serving bowl & stir in the sour cream.

Serve at once or refrigerate until ready to serve, up to 4 hours.
Makes 1 cup.
Use already roasted red peppers from jar or can.
Sauce will hold covered & refrigerated for up to 4 hours.
Use on fish.
