Ingredients:
1 8-ounce can tomato sauce
1/2 cup orange juice
1 cup finely chopped onion
2 T raisons
2 T black olives
1 1/2 tsp fresh oregano or 1/2 tsp dried oregano, crushed
1/2 tsp chili powder
1 clovev garlic, minced
several dashes bottled hot pepper sauce
2 boneless chicken breasts, cut into 2 inch pieces
1 T cold water
2 tsp cornstarch
1/4 cup snipped fresh parsley
2 cups hot cooked wheat rice
frozen corn (optional)
Instructions:
1. In a large skillet, combine tomatao sauce, orange juice, onion, raisons, black olives, oregano, chili powder, garlic & hot pepper sauce. Bring to a boil; reduce heat. Simmer, covered for 5 minutes.

2. Stir chicken pieces into skillet; return to boiling. Simmer, covered, for 12 to 15 minutes more or until chicken is tender & no longer pink. Add some frozen corn about halfway through if desired.

3. Cook rice.

4. Meanwhile, stir together cold water & cornstarch. Stir mixture into skillet. Cook & stir until thickened & bubbly. Cook & stir for 2 minutes more.

5. Toss parsley with rice. Serve chicken mixture over rice.

Makes 4 servings.
