Ingredients:
4 small skinless, boneless chicken breast halves (12 ounces total)
nonstick cooking spray
1 1/2 cups sliced mushrooms
2 T chopped green onion
2 T water
1/4 tsp salt
1/4 cupu dry Marsala or sherry
Instructions:
1. Rinse chicken; pat dry with paper towels. Flatten to about 1/4 inch thickness.

2. Spray an unheated large skillet with coating. Heat skillet over medium heat. Add chicken. Cook for 4 to 6 minutes or until no longer pink, turning to brown evenly. Remove from skillet. Keep warm.

3. Add mushrooms, green onion, water & salt to skillet. Cook over medium heat about 3 minutes or until mushrooms are tender & most of the liquid has evaporated. Add Marsala or sherry. Heat through. Spoon vegetables & liquid ove chicken.

Makes 4 servings.
