  Halibut With Tomato-Cilantro Pasta

Ingredients:
2 T oliveoil
1 1/2 T lime juice
1 T drained capers
4 (8-ounce) Roma tomatos, room temp, seeded & chopped
2 cloves garlic, minced
1/4 tsp cayene pepper
approx 2 tsp dried cilantro or 1/3 cup leaves
1 1/4 to 1 1/2 pound halibut steaks, about 3/4 inch thick
salt & pepper
olive oil & cooking spray
1 pkg (9-10 oz) linguine or angel hair pasta
Instructions:
In large bowl, stir together lime juice, capers, tomatoes, garlic, red pepper & cilantro; set aside.

Remove any skin from fish, rinse fish & pat dry. Cut into 4 serving-size pieces; season with salt & pepper.

Spray wide nonstick pan with cooking spray; place over med-high heat. Add fish & cook, turning once, until lightly browned on outside & just opaque but still moist in thickest part, 6-8 minutes. Cook pasta & drain. Set 2 T of tomato mixture aside; lightly mix remaining mixture with hot pasta.

Divide among 4 warm plates, starting with pasta, fish & top with reserved tomato mixture.

May need to add olive oil to pasta.

Serves 4.
