  Paarmesan Crusted Salmon w/ Angel Hair Pasta

Ingredients:
2 T Parmesan, grated
2 T Plain Panko Bread Crumbs
4 4-ounce each salmon fillets
Juice of one lime, divided
salt & pepper to taste
8 ounces Whole Wheat Angel Hair Pasta, uncooked
1/2 cup diced roasted red peppers
1 clove garlic, minced
1 T chopped cilantro
Instructions:
1. Mix Parmesan & bread crumbs together & set aside.
2. Lay salmon fillets skin-side down on a foil-lined baking sheet.
3. Drizzle salmon with half the lime juice & season with salt & pepper.
4. Coat top of the fillets with Parmesan mixture.
5. Bake at 400 for 14-15 min or until fish flakes easily with a fork. Broil the fish on high for 2 min to brown the coating.
6. While salmon is baking, cook pasta according to pkg directions.
7. Combine roasted red peppers, garlic & cilantro. Add remaining lime juice.
8. Once fillets are done, remove from baking sheet with spatula, allowing the skin to stick to the foil.
9. Divide pasta among 4 plates; top each with a salmon fillet & roasred red pepper salsa.

Serves 4.
