  Roasted Potatoes & Carrots

Ingredients:
red potatoes
carrots
olive oil
salt
pepper
herbs as desired
Instructions:
Toss red potatoes & carrots with a little olive oil, salt & pepper. Bake at 400 for 45 minutes or until tender, stirring after 20 minutes. For more flavor, add any favorite fresh herbs.
