  Spinach, Brie & Walnut Salad

Ingredients:
1/4 cup olive oil
1 1/2 T white wine vinegar
8 cups spinach leaves (about 6 oz), torn into bite sized pieces
1/2 cup thinly sliced red onion
6 oz Brie, diced, room temperature
salt & pepper to taste

2 sandwich-size French bread slices

1/2 cup toasted Walnut pieces
Instructions:
Whisk oil & vinegar to blend in small bow. Season dressing to taste with salt & pepper.

Combine spinach, onion & half of cheese in large bowl.

Preheat broiler.
Divide remaining cheese between bread slices & broil until cheese melts, about 1 minute. Cut toasts diagonally in half.

Toss salad with enough dressing to coat well. Divide salad between plates & sprinkle with walnuts. Arrange 2 toast halves on each plate & serve.

Serves 2. May be doubled.
