  Turkey Meatloaf

Ingredients:
3 cups chopped yellow onions (about 2 cups)
2 T olive oil
2 tsp salt
1 tsp black pepper
1 tsp fresh thyme (1/2 tsp dried)
1/3 cup Worchestershire
3/4 cup chicken stock
1 1/2 tsp tomato paste
5 pounds ground turkey
1 1/2 cups plain dry bread crumbs
3 extra large eggs, beaten
3/4 cup ketchup
Instructions:
1. Preheat oven to 325.
2. In medium saucepan, on medium heat, cook the onions, olive oil, salt, pepper & thyme until the onions are translucent, but not brown, about 15 minutes. Add the Worchester sauce, chicken stock, & tomato paste & mix well. Allow to cool to room temperature.
3. Combine the ground turkey, bread crumbs, eggs & onion mixture in a large bowl. Mix well & shape into a rectangular loaf on an ungreased baking sheet. Spread the ketchup evenly on the top. Bake for 1 1/2 hours until the internal temperature is 160 degrees & the meat loaf is cooked through.

Serves 6 to 8

A pan of hot water in the oven under the meat loaf will keep the top from cracking.

Recipe may be halved.
