Ingredients:
Creole Seasoning:

2 teaspoons paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper

-Shrimp:--------------------------------------------

3 T vegetable oil
2 T all purpose flour
1 onion, chopped fine
1 green bell pepper/ omit for Jay
2 celery ribs, chopped fine/ omit for Jay
Salt & Pepper
1/2 cup dry white wine
1 14.5 ounce can diced tomatoes
1/4 cup water
1 T Worcestershire sauce
1 teaspoon sugar
2 pounds large shrimp (26 to 30 per pound)
2 T lemon juice
2 T chopped fresh parsley
2 scallions, sliced thin
Instructions:
1. For the Creole seasoning:

Combine all ingredients in bowl & set aside.

For the Shrimp:
Heat oil in Dutch Oven until shimmering. Add flour & cook, stirring constantly, until light brown, 3 to 5 minutes. Add onion, bell pepper, celery & 1/2 teaspoon salt, & cook, stirring often
