  Uncooked Fresh Tomatoes Vinaigrette

Ingredients:
1 3/4 pounds firm, vine-ripened tomatoes, cored, seeded & cut into 1/2-inch pieces
3 T olive oil
3 T lemon juice (I used 1 T)
1 1/2 T finely shredded basil leaves
1 1/2 T chopped fresh Italian parsley
Freshly ground white pepper
Freshly grated Parmesan cheese to pass
Instructions:
In a mixing bowl, stir together the tomatoes, oil, lemon juice, basil & parsley. Season to taste with white pepper & let the mixture sit at room temperature, covered, for 20 to 30 minutes.

Toss with cooked pasta the moment the pasta has been drained.

Serves 4

Italian Secret spice may be substituted for the basil & parsley.
Also, could add a chicken breast on the side.
I have also added garlic.
