  Beef & Bean Chili

Ingredients:
1 T olive oil
2 onions, chopped
2 garlic cloves, minced
2.5 pounds ground sirloin
3 T chili powder
2 T ground cumin
1 tsp sweet paprika
2 14.5 ounce whole or diced tomatoes in juice
1 or 2 cans chili beans
1 14 ounce beef broth

sour cream
grated cheese (cheddar)
chopped green onions
chopped fresh cilantro
Instructions:
1. Heat oil in heavy large pot over med-high heat.
2. Add onions & saute until brown, about 6 minutes.
3. Add garlic & saute about 1 minute.
4. Add beef & cook until done.
5. Add chili powder, cumin, & paprika.
6. Add tomatoes with juice, beans & broth. Bring to a boil.
7. Reduce heat & simmer until chili thickens & flavors blend, stirring occasionally, about 45 minutes.

Can be made 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover & keep refrigerated.

Serve with sour cream, grated cheese, green onions & cilantro.
