Ingredients:
3/4 pound cooked shrimp
scant 1 cup thinly sliced celery
1/2 cup thinly sliced green pepper
1/2 cup thinly sliced onion
1/8 cup butter
1/8 cup pimento, chopped
1 cup sour cream
1/2 cup half & half
1 T lemon juice
1 tsp salt
1 tsp white pepper
1 can sliced mushrooms, drained
rice

1/4 cup dry bread crumbs
1 T melted butter
Instructions:
1. devein & rinse shrimp & pat dry.

2. Saute celery, green pepper & onion in 1/8 cup butter until partially cooked. Combine shrimp, vegetables & pimento & set aside.

3. Stir together the sour cream, half & half, lemon juice & seasonings. Combine part of this mixture with the rice & mushrooms (make it moist but keep enough to pour over top) & spread evenly in well-greased baking dish.

4. Place shrimp on top of the rice mixture. Pour remaining cream mixture over shrimp.

5. Combine bread crumbs & melted butter & sprinkle over top. Bake for 30-35 minutes at 350 or until heated through.

Serves 6.

Can be easily doubled.
