Ingredients:
4 T vegetable shortening 2T
5 T flour 2 1/2 T
1/2 chopped onion 1/4 cup
3 cloves garlic, minced 1 1/2 cloves
1/4 cup green pepper, minced 1/8 cup
1/4 cup celery, chopped 1/8 cup
1 8-oz can tomato sauce 1/2 can
3 cups water 1 1/2 cups
1/2 tsp salt 1/4 tsp
1/4 tsp cayenne 1/8 tsp
3 pounds fresh shrimp, med or jumbo, cleaned & deveined 1.5 lbs
Instructions:
Melt shortening in a 2 quart saucepan. Add flour & cook over medium heat, stirring constantly to make a golden-brown roux. Add onion, garlic, green pepper & celery & cook until tender.

Add tomato sauce. Stir & cook about 5 minutes.

Add water, salt & cayenne. Simmer for 15 minutes.

Add shrimp. Cover & simmer for 20 minutes more.

Serve over rice.

Serves 6.
