  Zucchini Bread

Ingredients:
3 3ggs
2 cups sugar
1 cup vegetable oil
1 T vanilla
2 cups loosely packed coarsely grated zucchini
2 cups flour
1 T cinnamon
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 cup chopped walnuts
Instructions:
Preheat oven to 350.

In a bowl, beat the eggs until they are frothy.
Beat in sugar, oil & vanilla & beat until mixture is thick & lemon colored.
Stir in the zucchini & the flour, sifted with the cinnamon, baking sodaa, salt & baking powder. Fold in the walnuts.

Pour mixure into 2 oiled & floured loaf pans, 8 by 4 1/2 by 3 inches.
Bake for 1 hour or until tester comes out clean.

Let cool & invert on rack.
Makes 2 loafs.
