Ingredients:
1 cup cauliflour, chopped fine
1/4 cup finely chopped onion
1/4 cup each finely chopped carrot & celery
2 T butter
1/3 cup cornstarch
2 cups chicken broth
2 cups light cream
1/4 tsp red pepper
1/8 tsp salt
1/4 tsp black pepper
8 oz sharp Cheddar cheese, shredded
Instructions:
In large soup pot, on low heat, cook vegetables in butter until tender, not brown.
Stir flour into broth until smooth. Add broth & cream to vegetables; cook & stir until thick & bubbly.

Add cheese to pot & season with salt & pepper as needed.

Cook & stir until cheese has melted soup is heated through.

Options:
Add 1 can of small shrimp, drained & rinsed.
OR
Add brocolli, chopped & chunks of cooked ham.

4 main courses or 8 starters.
