  Lemon-Pepper Tuna

Ingredients:
4 tuna steaks 3/4 inch thick
1/2 tsp salt
1/2 tsp coarsely ground black pepper
1 T country style Dijon mustard
1/2 cup chicken broth
1T lemon juice
1 T vegetable oil
1 T finely choped chives
Instructions:
Sprinkle both sides of tuna with salt & pepper. Heat oil in nonstick skillet over med-high heat. Add tuna, cook until browned on both sides & just slightly pink in center, about 8 minutes. Transfer tuna to platter. In same skillet, add chicken broth & lemon juice. Heat to boiling. Remove from heat. Swirl in mustard & chives. Spoon sauce over tuna & serve immediately.

We like our fish well done so will cook it longer than this recipe requires.
