Instructions:
Slice peppers in half vertically, remove seeds & ribs, & place cut-side down on a baking sheet. Place under the broiler & broil until skins are blackened. Remove from oven & put in a bowl. Cover with plastic wrap. Let cool about 15 minutes. Remove skins. Serve in a salad or on toasted baguette slices. To preserve the peppers for up to one week, place in a jar & cover with extra-virgin olive oil.
