  Apple Pecan Muffins

Ingredients:
2 cups flour
1/3 cup sugar
1 T baking powder
1/2 tsp salt
1 egg
1 cup milk
3 T butter, melted
1/2 tsp ground cinnamon
1/4 cup finely chopped pecans
1 small tart apple, peeled, cored & shredded
Instructions:
1. Preheat oven to 400. In a large bowl, stir together flour, sugar, baking powder & salt. Add 1/2 tsp ground cinnamon & 1/4 cup pecans.

2. In a medium bowl, beat egg with milk, melted butter & apple. Add egg mixure to flour mixture, stirring only until flour is moistened.

3. Fill greased 2 1/2 inch muffin pans 2/3 full. Sprinkle each muffin lightly with about 1 tsp pecans before baking.

Bake for a total of 25 to 30 min.

Makes 1 dozen muffins.
