Ingredients:
ra-DEE-kee-o
A bitter, pepper flavored plant from Italy, also known as Italian chicory.
Color ranges from magenta to maroon & offset by stark white veins.
There are a number of varities; radicchio di Verona & radicchio di Treviso are the two most widely available in the U.S. The Verona version grows in a small round head; Treviso radicchio has narrow, pointed leaves that form a taper.
Instructions:
Use in salads.
