  Apple Nut Cake

Ingredients:
Cake:
1 1/2 cup veg oil
1 1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
3 eggs
3 cups flour
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
3 1/2 cup coarsely diced, peeled apples
1 cup chopped pecan or walnuts
2 tsp vanilla

Glaze:
3 T butter
3 T firmly packed light brown sugar
3 T granulated sugar
3 T evaporated milk (I use 3 T heavy cream)
1/4 tsp vanilla
Instructions:
Cake:
Preheat oven to 325. Butter & flour a 10 tube pan. Combine oil & sugars in large bowl & blend well. Add eggs one at a time, beating well after each addition. Sift flour, baking soda, salt & spices. Add to creamed mixture, blending well. Fold in apples, nuts & vanilla. Spoon into a buttered, floured tube pan, spreading evenly. Bake 1 hour & 15 min or until cake tests done. Cool in pan 20 min. Turn onto wire rack & continue cooling while preparing glaze.

Glaze:
Combine all ingredients in a heavy saucepan & bring to boil over medium heat. Boil 1 minute. Spoon over warm cake.
