Ingredients:
4 chicken cutlets
flour
2 T vegetable oil
1/4 cup vodka
1/2 cup chicken broth
2 T fresh lemon juice
1/2 cup tomatoes, chopped
1 T heavy cream
1/3 cup scallions, sliced
Instructions:
Pound cutlets to 1/4 inch.
Season with salt & pepper, then dust with flour.
Coat a saute pan with nonstick spray, add 2 T oil & heat over medium-high heat.
Saute cutlets on both sides. Transfer to a platter; pour off fat from pan.
Deglaze with vodka (AWAY FROM THE FLAME)
& cook until nearly evaporated. Add broth & lemon juice.
Return cutlets to pan & cook on each side for 1 minute.
Transfer cutlets to a warm plate.
Finish sauce with tomatoes & cream. Heat through, then pour over the cutlets.
Garnish with scallions.

Serves 2.
