  Apple Stuffed Pork Chops

Ingredients:
pkg of stuffing mix
butter
2 cups finely chopped apples (or so )
1/4 cup finely chopped celery (or so)
2 tsp minced fresh parsley
3/4 tsp salt (divided)
6 bone-in-pork loin chops (1 to 1 & 1/2 inch thick)
1/8 tsp pepper (or to taste)
vegetable oil, approx 1 T
Instructions:
Preheat oven to 350.

Prepare stuffing mix according to pkg directions, adding apples, onions & celery.

Trim chops of fat & season inside & out with salt & pepper. Cut pocket almost to the bone & stuff with dressing.

In a large skillet, brown the chops on both sides in oil. Place in an ungreased baking pan & bake, covered, at 350 for 30 minutes.

Uncover; bake for 30 minutes longer or until a meat thermometer reads 160 degrees when inserted into the meat -- & the juices run clear.

Serve dressing on the side.

Serves 6.
