  Toasted Baguette Slices with Pecan Butter, Brie & Apples

Ingredients:
24 1/4-inch French bread baguette slices
6 T (3/4 stick) butter, melted

1 cup chopped pecans
1 T peanut oil
salt
4 ounces cream cheese, room temperature
1 red apple, halved, cored & cut into 24 slices
8 ounces chilled Brie, rind trimmed, cut into 24 slices
24 pecan halves, toasted

Instructions:
Preheat oven to 400. Toast pecans. Set aside.

Place baguette slices on heavy large cookie sheet. Brush with melted butter. Bake until golden brown, about 8 minutes. Cool completely.
(Can be prepared 1 day ahead & stored in airtight plastic bag at room temperature.

Blend 1 cup pecans with peanut oil in processor to smooth paste, stopping occasionally to scrape down sides of work bowl. Season with salt.

Spread cream cheese on croutons. Top with apple slice, then Brie slice. Spread pecan butter over top. Top with pecan half. Place on large cookie sheet & bake until cheese melts slightly, about 1 minute.
