  Classic Shrimp/Crab Louis

Ingredients:
1 cup mayo
1/4 cup tomato-based chili sauce
1/4 cup each finely chopped green pepper & green onion
1/4 cup whipping cream, whipped
salt
lemon juice

2 small heads iceberg lettuce
3/4 - 1 pound cooked shrimp or canned crab
4 large tomatoes, cut into wedges
4 hard cooked eggs, cut into wedges
sliced avocado
parsley sprigs
lemon wedges
Instructions:
Mix together mayo, chili sauce, pepper & onion; fold into whipped cream. Season with salt & pepper & lemon juice to taste.

Arrange salad & serve with dressing & lemon wedges.

I use large, frozen shrimp.

Serves 4.
