Ingredients:
3 large eggs
1 1/2 cup 2% cottage cheese
1 c Bisquick
1/2 stick butter, melted
3 T sour cream
1/2 tsp chopped rosemary
1/2 tsp salt
1/4 tsp black pepper
4 oz pkg crumbled Gorgonzola cheese
pine nuts
Instructions:
Preheat oven to 400. Spray mini muffin pan with Pam. Whisk eggs, cottage cheese, Bisquick, butter, sour cream, rosemary, salt & pepper in large bowl. Stir in Gorgonzola. Fill muffin tins with 1 T batter & top with pine nuts. Bake about 28 minutes until gold & puffy.

Serves about 45.
