  Grilled Salmon Burritos With Cucumber Salsa

Ingredients:
8 ounces soft fresh goat cheese (such as Montrachet), room temperature
1/2 cup whipping cream
1/3 cup chopped fresh cilantro
6 10-inch-diameter flour tortillas
2 15-ounce cans black beans, drained, 1/2 cup liquid from can reserved

1 T EVOO
1 T chili powder
6 5-ounce salmon fillets

Cucumber salsa
Lime wedge
Instructions:
Preheat oven to 350. Prepare barbeque (med-high heat).

Mix goat cheese, cream & cilantro in med bowl to blend. Season to taste with salt & pepper. Wrap tortillas in foil; heat in oven 10 minutes.

Stir beans in saucepan with reserved bean liquid over med-high heat until heated through.

Mix oil & chili powder in small bowl. Sprinkle salmon with salt & pepper; coat with chili powder mixture. Grill salmon until opaque in center about 4 minutes per side.

Place 1 tortilla on work surface. Spoon 1/4 cup beans, then 1/4 cup cheese mixture in center of tortilla. Top with 1 salmon fillet. Fold tortilla sides over filling, then roll up to enclose completely. Repeat with remaining tortillas, beans, cheese mixture & salmon.

Spoon some cucumber salsa atop each burrito. Serve with lime wedges & pass remaining salsa separately.

Serves 6.
