Ingredients:
2 T olive oil
1 yellow onion, chopped
1 clove garlic, minced
2 cans (15 oz each) tomato sauce
1 can (6 oz) tomato paste
2 tsp light brown sugar
salt
pepper

1 3/4 T salt
1 lb ziti pasta
1 lb lean ground beef
1 container (15 oz) ricotta cheese
1 large egg, lightly beaten
1/4 tsp pepper
1/4 cup chopped fresh flat-leaf parsley
2 cups shredded mozzarella cheese
Instructions:
Tomato Sauce:
Warm oil in a 4-quart saucepan over med heat & swirl to coat the bottom of the pan. Add the onion & garlic & saute, stirring occasionally, until the onion is softened, about 5 min. Stir in the tomato sauce, tomato paste & brown sugar, reduce the heat to low & simmer, uncovered, for 15-20 min to meld the flavors. Season to taste with salt & pepper. Set aside.

Fill an 8-to 10-quart stockpot 2/3rds full of water & bring to a boil over high heat. Add 1 T salt to the boiling water & then add the pasta. Stir & cook the pasta until al dente, about 10 min. Drain & rinse the pasta in a colander. Set aside.

To assemble the dish, preheat the oven to 350. In a large Dutch oven over med heat, cook the ground beef, breaking up the meat with the back of the spoon until browned, about 5 min. Remove from the heat & drain off the fat. Stir in the ricotta, egg the remaining 3/4 tsp salt, pepper & parsley. Add half of the tomato sauce & mix to combine. Gently fold in the cooked pasta. Transfer to a 9-by 13-inch glass baking dish, & level the mixture lightly with the back of a spoon. Pour the remaining tomato sauce over the top & sprinkle with the mozzarella.

Bake, uncovered, until hot & bubbly, 20-25 min. Serve immediately.

Serves 6.
